The 0se is characterised by the lifted floral 0tes of musk and summer fruits with the palate having a great natural fruit sweetness. The slight natural effervescence is refreshing and cleansing, with fruit 0tes of lime and pineapple with a clean zesty finish.Picked early in the morning, the fruit was delivered cool to the winery. Gentle pressing to minimise phe0lics and cold settling preceded a long, cool fermentation averaging 12ºC. The fermentation was left to run its course over 14 days leaving a naturally sweet, vibrant wine. A touch of spritz is detectable on the palate from the residual carbon dioxide which was harnessed and bottled to retain both fruit vibrancy and freshness.
